What is Omurice?
Omurice is a popular Japanese comfort food that combines Western and Japanese flavors. The name comes from “omelette” and “rice.”
It typically consists of ketchup-flavored fried rice wrapped in a soft, fluffy omelette.Inside, you’ll often find simple ingredients like chicken, onions, and sometimes vegetables.
Omurice is loved for its nostalgic, home-cooked feel and slightly sweet, savory flavor from the ketchup. It’s a dish many Japanese people grow up eating—both at home and in casual restaurants.
In this recipe, we turn this classic dish into a fun and portable version: Omurice Onigiri.
Ingredients (5–6 onigiri)
500g cooked rice
2 eggs
1 tbsp milk
1/4 onion (90g)
60g bacon
2 tbsp ketchup
A pinch of salt
5g butter
How to Make Omurice
Finely chop the onion and cut the bacon into small pieces. In a bowl, whisk the eggs with milk until smooth.
Heat a little oil in a frying pan over medium-low heat.Pour in the egg mixture and gently stir to create soft, fluffy scrambled eggs.Remove from the pan while still slightly creamy.Tip: Avoid overcooking—the eggs should stay soft.
In the same pan, cook the bacon until it releases its fat. Add the chopped onion and a pinch of salt, then sauté until the onion becomes soft and translucent.
Add the ketchup and cook for about 3 minutes, stirring well. This step helps reduce the acidity and brings out a richer flavor. Add the cooked rice and mix thoroughly.
Return the scrambled eggs to the pan. Gently fold everything together, being careful not to overmix so the eggs stay fluffy.
While still warm, form the mixture into onigiri using a mold or plastic wrap.
