Today, I'm sharing Miso-Marinated Salmon Onigiri. The savory salmon pairs perfectly with warm Japanese rice! And the best part? These onigiri are freezer-friendly. š
Miso-zuke is a traditional Japanese method of marinating vegetables, meat, or fish in miso. While it was originally used to help preserve food, it also infuses ingredients with a rich miso aroma and enhances their natural flavor.
When fish or meat is marinated in miso, the umami becomes more concentrated, and the texture stays wonderfully moist and tender after cooking.
What is Miso ?

Ingredients
For the Miso-Marinated Salmon (Sake no Misozuke)
Makes enough for several meals.
3 salmon fillets (about 70 g each)
2 tbsp miso
2 tbsp mirin
For the Miso-Marinated Salmon Onigiri (2ā3 onigiri)
300 g cooked Japanese rice
1 piece of miso-marinated salmon
Some green onions, finely chopped
Instructions
š Miso-Marinated Salmon (Sake no Misozuke)
Mix the miso and mirin in a bowl.
Spread a thin layer of the mixture in a tray.
Place the salmon on top and cover evenly with the remaining miso mixture.
Marinate in the refrigerator for at least 1 hour or overnight.
Before cooking, wipe off the miso mixture thoroughly.
Cook over low heat until golden and cooked through on both sides.

Flake the cooked salmon and mix it with the rice and green onions.
If needed, add a little of the leftover marinade (cooked first) for extra flavor.
Shape into onigiri and enjoy!

Wipe off the miso thoroughly before cooking, as it burns very easily.
